P2 Egg Salad


I keep hardboiled eggs in the fridge for times I have to go somewhere and didn't plan ahead for lunch, or if I just need something quick at home.

Egg Salad

4 Hardboiled Eggs (discard 3 yolks), finely chopped
1 Tbsp Milk, Mayo or Ranch, depending on your comfort with bending the rules
Squirt of Mustard
Salt and Pepper to taste

Mix everything up as desired and serve over lettuce leaves. Quick and yummy!

P2 Cucumber Salad

Cucumber Salad

2 Cucumbers, peeled
1/4 cup Apple Cider Vinegar
1/4 tsp Salt
10 drops Liquid Stevia

Mix vinegar, salt and stevia together. Thinly slice cucumbers and marinate. The longer this sits, the better it gets.

P2 Chicken Chili

Using diced chicken in chili made for a nice change in this meal.

Chicken Chili

3.5 oz Chicken breast, diced
1/2 cup Onion, diced
1 clove Garlic, diced
1/2-1 cup Water
1/2 cup Tomato Sauce
1 large Tomato, diced
1 tsp Cumin
1/2 tsp Chili Powder, to taste
1/2 tsp Cilantro
Salt and Pepper to taste

In a medium sauce pot or pan, cook chicken with onion, garlic and water until chicken is done. Add water as needed to keep things moving around. Add tomato sauce, diced tomato and spices. Allow to simmer until tomatoes are cooked and the mixture thickens.

P3 Chocolate Waffles

Would you believe this waffle is sugar-free and grain-free?

I made waffles for my family and our guests, and was wanting one of my own, so I threw this together. The batter is very thin when you pour it into the waffle iron, but the eggs puff right up. I loved it! This would also make a good dessert. :)

Chocolate Waffles

2 Eggs
1 Tbsp Milk
1 tsp Olive Oil
1/2 tsp Vanilla
15 drops Liquid Stevia
1/8 cup Coconut Flour
1/8 cup Cocoa

Combine wet ingredients together, then add coconut flour and cocoa and mix well with a fork to break up any lumps. Pour into a preheated greased waffle iron and cook until done, 3-4 minutes.

Serve with sliced strawberries and whipped cream, if desired.

P2 Curry Chicken

I loved this chicken! I ate it by itself with a salad on the side.

Curry Chicken

1/4 cup Chicken Broth
1/4-1/2 cup Water
1/2 cup Tomato Sauce
1-2 tsp Curry Powder
1/3 cup Onion, chopped
3.5 oz Chicken Breast, diced

In a medium pot or pan, heat broth, water and tomato sauce. Stir in curry powder. Add onion and cook until chicken is done. Remove chicken and continue simmering broth until it reduces and thickens into a sauce. Pour over chicken.

P2 Chicken Cabbage Stir Fry

We ate stir fry on rice pretty often before I started HCG, and I was missing it, so I thought maybe if I chopped some cabbage finely, I could convince myself it was almost like rice. It wasn't, but it was still very tasty. This became one of my staple recipes. It's very filling!

Marinade:
1 Tbsp Lemon Juice
1 Tbsp Apple Cider Vinegar
2 drops Liquid Stevia
1-2 Tbsp Bragg's Liquid Aminos
2 cloves Garlic, minced
chopped Onion if you like

Marinate 3.5 oz chopped up chicken while you chop cabbage.

Chop cabbage as finely as you can. I was able to get a pretty good shred with my knife. I used half of a small head of cabbage.

Stir-fry cabbage with a little water until cabbage is mostly done. Remove cabbage to a separate bowl. Cook chicken until done, and remove. Let remaining water boil until sauce thickens up some. Throw everything back in and toss to coat. Serve. YUM!

P3 Cheesecake

I don't think anyone would know this cheesecake is completely sugar-free. It is absolutely delicious!

Crust
1 cup Pecans or Almonds, ground
2 Tbsp Erythritol, likeWholesome Sweeteners Organic ZeroorZ-Sweet
3 Tbsp Butter, melted

Combine and press onto bottom of 9-inch Springform pan. Bake at 325* for 10 minutes. Then increase oven temperature to 450*.

Filling
4 8-ounce packages Cream Cheese (regular or reduced fat)
1 cup Erythritol, likeWholesome Sweeteners Organic ZeroorZ-Sweet
4 Eggs
1 cup Plain Yogurt (Sour Cream would work as well)
1 Tbsp Vanilla

Combine cream cheese and Z-sweet, mixing at medium speed on electric mixer until well blended.

Add eggs, one at a time, mixing well after each addition. Blend in yogurt and vanilla. Pour over crust.

Bake at 450* for 10 minutes. Reduce oven temperature to 250 degrees and continue baking for one hour. Loosen cake from edge of pan and let cool completely, then chill in the refrigerator. May top with sugar free chocolate syrup or fruit.
